299: Lukáš Tomsa of Dva Kohouti Brews the Beer, but the Bartender Makes the Beer In the trendy Karlín neighborhood of central Prague, the brewpub called Dva Kohouti embodies the merger of the two key elements of Czech beer culture: the brewing and—no less important—the pouring and service. The side-pull taps attached directly to the serving tanks behind the bar are only part of the story.

In this episode recorded at the brewery, head brewer Lukaš Tomsa explains the ideas behind Dva Kohouti, how they brew their traditional lagers and more internationally inspired ales, and how they ensure that the service end completes the job of creating a great beer. Among other topics, he discusses:

the importance of pouring and service that respects the product
a brewery-taproom concept that gives production and service equal emphasis
comparing single- and double-decocted pale lagers
fermenting a bit warmer than traditional Czech brewers, to keep diacetyl in check
getting natural carbonation by capping the tank during fermentation
using decoctions for tart fruit beers and American-style pale ales and IPAs
using decoction and raw barley to promote foam in a quick-soured fruit beer
paying attention to glassware and draft lines to ensure perfect pours

And more.

Brewing up Diversity with Black Brew Culture and Ale Sharpton Mike Potter and Ale Sharpton are on a mission to bring craft beer to minority communities, and to bring those communities to craft beerMost of the 9,000+ craft breweries across the US are white-owned businesses with predominantly white clientele.  There's nothing inherently wrong with that, and that doesn't automatically mean anyone is excluded.  But, having representation of your community in anything can make you feel much more included.  And that's where Ale and Mike come in. Mike Potter was one of the founders of Fresh Fest, America's first black craft beer festival.  Since then he's founded Black Brew Culture to focus on the beer, culture, food, and lifestyle of craft beer.  This month he'll kick off Blacktoberfest, a multi-city celebration of beer, food, art and entertainment.Ale Sharpton has been a Friend of the Show since we launched.  He's joined us to talk about his adventures and articles as well as introducing us to Leaders of the Brew School.  You may have seen Ale's writings for Thrillist, Craft Beer & Brewing, Forbes, and many others. His collaboration stout brewed with New Belgium, Piano Keys, is coming back soon for another release as well as some exciting events at the Great American Beer Festival.  Proceeds from the brew benefit his non-profit, BrewGether. Thanks for listening to Beer Guys Radio! Colorado beer with Jagged Mountain and Colorado Brewers Guild The last time I was in Colorado was for the Great American Beer Fest back in 2016.  I know how much Georgia's craft beer scene has changed since then and no doubt it's the same for Colorado.  Outside of the festival we visited awesome spots like Mockery, Trve, Crooked Stave, Great Divide and a few more.  I need to get another visit soon to try some of the stuff I missed last time.Jagged Mountain's Chad Bratt and Executive Director of the Colorado Brewers Guild Shawnee Adelson  join us on the show this week.  We learn about the challenges facing Colorado's brewers and a couple of fun events like the recent Collaboration Fest and upcoming Colorado Pint Day, and protecting good beer laws. The Beer ListOf course we have some Colorado beers on deck with Weldwerks Juicy Bits IPA and Odyssey Beer Works I'm Not Dead Vienna lager. We got some sad news this week that one of our favorite local spots Orpheus Brewing is closing it's taproom.  We opened their The Bridge (Wild Ale with botanicals) to mourn the loss. Thanks for listening to Beer Guys Radio! Bud Light trigger warning, craft beer Fools, and AI brews a beer Craft beer is always on fire for April Fools.  I have to admit, not a fan.  But Brian is, so he made a Twitter thread with as many as he could find.  Ham beer, dried beer, exxxtra long cans.  But then you have the ones that are supposed to be jokes, but actually exist.  Pickle beer and cucumber Kolsch?  Come on, Y'all gotta give it more than that.It was a spicy week for Bud Light after their partnership with a trans rights activist.  Kid Rock broke out the guns and a lot of folks dumped their Bud for Coors Light, which probably didn't work out as well as they thought. We reminisce about last weekend and our first trip to a biergarten Kolsch service at Halfway Crooks.  If you've never been to a good Kolsch service, you should change that.Guinness is making big moves.  Baltimore brewery is closing, and Chicago brewery is coming soon.  Sounds expensive.  But NA is doing OK.  Our friends at Athletic Brewing continue to grow and are on track to be a Top 15 brewery. Is it beer healthy?  That's one of those questions that will always be debated.  We talk about a couple articles with conflicting opinions.  And I'm sure we'll have more opportunity to do the same in the future. All this beer drinking and so little recycling.  Turns out many beer labels make cans un-recyclable.  How do we fix this one? We'll be back in the studio next week for our final radio broadcast then it's off to Little Beer Fest for a remote broadcast before we go podcast only.  It's gonna be a busy few weeks over here. Thanks for listening to Beer Guys Radio! The end of an era, craft beer sales down, and bye bye Mikkeller Cheers to 7 years: Turning the page to BGR 2.0This episode is the final episode we will record in the Beer Guys Radio studio and the final radio broadcast of the show.  We're not going away, BGR 2.0 is around the corner, but it is a bittersweet moment as we say goodbye to the old and get excited for what's next.We reminisce about our favorite moments from the past seven years, including meeting Beer Archaeologist Travis Rupp, talking to Dan Carey, and interviewing Alan Sprints of Hair of the Dog.  We also discuss the decline in craft beer sales and ponder the reasons behind this decline. Additionally, we explore the closure of Mikkeller's final US location and Heineken cutting draft sales to five states due to supply chain issues. Join us as we celebrate the end of an era with our last studio session and radio broadcast, featuring a special appearance from our friend Fish Scales of Nappy Roots and Atlantucky Brewing. And remember, we'll be back as a podcast, so be sure to subscribe on your favorite podcasting app!Craft Beer Sales Decline in 2022According to the National Beer Wholesalers Association, craft beer dollar sales were down 4.8% in 2022, with case sales down 8.6%. We ponder the reasons behind this decline, such as changing tastes, health consciousness, and supply chain issues during the pandemic. The craft beer industry is facing several challenges, including increased competition from other beverages like hard seltzers and non-alcoholic beers. However, despite these challenges, the craft beer community remains strong and continues to produce innovative and delicious beers for fans to enjoy.More news in this episode- Mikkeller's Final US Location Closes- Heineken Cuts Draft Sales Due to Supply Chain IssuesCelebrating Craft Beer FriendshipsAs we wrap up this chapter of Beer Guys Radio, we want to take a moment to celebrate the friendships and connections that we have made in the craft beer world. Through our travels, interviews, and collaborations, we have met countless amazing people who share our passion for craft beer. From celebrities like Adam Carolla and the guys from Foreigner to local brewers and fans, the craft beer community is truly a special and welcoming place. As we embark on our next adventure as a podcast, we encourage you to continue exploring the world of craft beer and supporting your local breweries. Episode 478 – The Smoke Shop Seemingly popping up on more local taplists than ever, smoked beers are moving past being a niche brewery-only oddity. We find five beers that enlist smoked malts in their production to give off a surprising variety of flavors – and a refreshing level of nuance. Also, we role play our own Chopped appearances, spend some time living in the aftertaste, and accept that this might be one of the best top-to-bottom lineups of beer we’ve done all year. Smoke ‘em if you got ‘em. Episode 479 – Hazy Flagship IPA Blind Battle Royale: Round 2 The second installment in our ongoing (and expanding) arbitrary competition to determine what we deem to be the best Chicagoland Flagship Hazy IPA continues with this murderer’s row of five eclectic and skilled breweries. There are many joyous smells and even a false lactose spotting, but at least there are no glasses of SkittleMilk on this show. See who’s moving on to the championship round, and who may find a second chance on the bubble. We can almost guarantee you’ve never heard of Four City Brewing, but it’s a powerhouse young brewery that demands attention from craft beer lovers near and far. Founded in 2016 by Anthony Minervino, Roger Apollon Jr. & Jeff Gattens, this 7bbl shop is working to define the unique profile of New Jersey craft beer. In a new edition of our “Taproom Special” segment, Stephen & Gabe stop by the brewery for a killer flight featuring a variety of beer styles from Germany to Belgia!
Featured beers: Oat Cream Man IPA, We Think It’s a Dunkel?, It’s Better Than Yours Milkshake IPA, St. Cloud Belgian Dubbel, Fourghettastoutit, Blueberry Maple Stout & Crescent Moon Chai Latte Imp. Stout. (SHEESH!) Plus: Would you spend $10K on a rock?

Round 138 – Wicked Weed This week, Stephen & Gabe stop off in Asheville, NC for a visit to Wicked Weed Brewing! Since opening as a brewpub in 2012, Wicked Weed has earned a reputation for pushing the craft beer envelope, offering a diverse, interesting lineup of brews that always deliver on flavor. Having grown substantially in the past decade, the company currently operates 4 taprooms in the Asheville area including a Funkatorium devoted exclusively to sours. Though lesser known outside of the Southeastern U.S., Wicked Weed has certainly become a powerhouse in the local market making it the perfect spot for The HOP’s first visit to the Tar Heel State.
Featured beer: Dr. Dank West Coast IPA. Plus: Scientists in the UK are working to battle an unlikely source of climate change . . . we promise it’s not what you think!

Baltimore native Brian Strumke started Stillwater, pivoting away from a successful career as an internationally renowned DJ. Today, the operation still functions as a “gypsy brewery,” crafting ales all over the United States and around the world.
Featured beers: World Famous Pilsner and “This is Not a Test” 006, (a Nitro Mocha Cappuccino Stout brewed w/ coffee, cocoa, vanilla and milk sugar!) Plus: Gabe learns what beef is… and the return of Superspak.

298: Aleš Potěšil of Prague’s Břevnov Monastery Brewery Is Perpetually Pushing for Pitelnost Documents show a brewery at the Břevnov monastery in Prague as early as 993. There have been interruptions over the centuries, but the current Břevnov Monastery Brewery of St. Adalbert is the third incarnation, founded in 2011. This one has gained local and international fans for aromatic and highly drinkable pale lager, Benedict 12°, a well as for its other beers, including an imperial stout, a monastic IPA, and a 9 percent ABV imperial lager beloved by the Břevnov’s own Benedictine monks.

In this episode, Břevnov brewmaster Aleš Potěšil discusses their approach to these exceptional beers, including:

leaning into Saaz hops and whirlpool additions for distinctive aroma
the meaning of pitelnost, and aiming for great drinkability
the importance of malt specs and protein content in ensuring sufficient body
the benefits of decoction mashing, including both body and higher attenuation
the Břevnov double-decoction process, step by step
adjusting the mash steps and times depending on malt specs
reducing and managing diacetyl to accentuate body
bringing Czech-style drinkability to an IPA

And more.

Now in its third year, Pivovar Proud is Pilsner Urquell’s experimental playground—a beautifully equipped 30-hectoliter kit producing a range of both ales and lagers and other creations less easily categorized. Its head brewmaster Lenka Straková has access to Pilsner Urquell’s resources—including malt from its own maltings—but she also has creative license to dabble in New World hops, various yeasts, barrel-aging, and more.

In this episode, Straková tells us more about what she and her team are up to at Proud, including:

how Pilsner Urquell’s owner, Asahi, agreed to go along with a substantial experimental brewery focused on craft beer
how Proud’s own flagship pale lager, Ventill, is based on Pilsner Urquell and yet markedly its own beer
her approach to diacetyl reduction in Czech lager
brewing with 34/70 yeast—the same used at Gambrinus—and her trials with various new Czech hop varieties combined with traditional lager-brewing methods
brewing ales and craft styles for a Czech audience, with their own spin
adjusting Plzeň’s famously soft water
happy accidents and barrel-aged imperial brut IPAs

And more.

Daftaboutcraft – Craft Beer Podcast – Episode 42 (March 27, 2023) Episode 42  kicks off with our popular Brew To Me feature that sees us roadtest beers from Mill Hill Brew Co in Leicester and  Modest Beer in Northern Ireland. We're both impressed with what we try, and Dave B not just because he spent his student days in Mill Hill's neck of the woods. Regular listeners might recall the name Ogham Brewing from a previous episode. Dave B tried the very first brew from this set-up in the north-east, and was so impressed that we've got owner and brewer (and everything else!) Michael on the episode to tell us much more – including details of a project he hopes will see him grow his own hops. Hype Or Tripe returns as we put a pair of weighty IPAs from Pressure Drop through their paces, not just in terms of what's inside the cans but the cans themselves. Ever wanted to know more about beermats? Well this is your chance to find out all you ever wanted to know in our newest feature Any Other Beersness. We turn the spotlight on award-winning Mosaic Board Print as Nathan Houghton joins us for a fascinating insight into this often-missed corner of the beer world.Plus there's plenty more going on as usual, including The Brewer's Wife – aka Sam from the Copper Beech Brew Co in Kidderminster with a most amusing tale about their early days. Daftaboutcraft is produced by us two guys, called Dave. We're massive fans of the craft beer scene and we release a new episode every three weeks. Round 137 – Emerald Isle We may be a bit late to the game, but Stephen & Gabe weren’t going to let St. Paddy’s Day pass us by! It’s our annual Irish festival this week on a jam-packed episode that truly has it all. The boys kick things off with a shot of Irish whiskey, (as always,) thanks in part to a certain Irish UFC fighter that may or may not make an appearance. Then, Gabe heads the cider route while Stephen checks out a Kilkenny brewery recently raised from the dead. Finally, we’ll round things out by sampling one of the few Guinness offerings we’ve yet to try. Plus news & notes, This Week in Gross, and so much more. Sláinte!
Featured drinks: Jameson Black Barrel Edition, Proper No. Twelve Irish Whiskey, Magner’s Original Irish Cider, Sullivan’s Irish Gold & Guinness Nitro Cold Brew Coffee Stout . . . (sheesh!) Plus: The return of our in-house leprechaun and Stephen’s hot tip for watching The Banshees of Inisherin.

Episode 477 – Barrel-Aged Triptych This year marks the tenth anniversary of Savoy, Illinois’ Triptych Brewing and their creative, artfully-crafted brews, and we’re toasting to them with four of their barrel-aged beers. We went into this one expecting quality beers, but the results far exceed what we could’ve imagined – and should have every Chicago big beer lover driving south for these specialty releases. Plus we’re reaching alcohol-by-volume heights we hardly ever see, so we’re soaring by rankings time. Also, Craig’s only green t-shirt gets him into trouble, Ryan reaps what he sows re:BCBS, and we get a little sad thinking about a lonely whale.  Beers Reviewed Batch 969 [collaboration w/ Foreign Exchange] (Barleywine aged in Amburana and bourbon barrels) AJ’s Stout Vol. 2 [2022] (Blended barrel-aged imperial stout) Dearest Anna (Barrel-aged imperial stout w/ Intelligentsia coffee and Tahitian vanilla) 52.5 Hz (Bourbon barrel-aged stout w/ pistachios and Ugandan vanilla beans)

Our Mutual Friend Brewery with Jan Chodkowski Come and share a brew with Our Mutual FriendI once heard a story that when a mobster introduces someone to another mobster they're introduced as "a friend of ours" if that person is also in the mob.  I was excited to think that Our Mutual Friend Brewery had some mob ties but, unfortunately, the name simply refers to beer being something everyone can enjoy, a mutual friend. <sigh>Despite my extreme disappointment we still had an amazing conversation with Head Brewer Jan Chodkowski.  He's pretty laid back and he likes beer.  I can appreciate that.  Jan was even a good sport as we bantered about Cold IPA and my argument that it's not a real thing.  He defended talking something about the brewing methods and all that making it unique.  I'll admit he had a strong case, and he's a fan of the style. With the Great American Beer Festival coming to Denver soon Our Mutual Friend has a little party of their own planned.  Gratitude 9 is a thank you to the community and a special beer release.  Sounds like a great way to pre-game for the madness of GABF.Jan is also a fan of saisons and mixed fermentations and Brett and foeders.  He's quickly becoming our favorite person.  OMF (we can call them that now 'cause we're tight like that) used to do some spontaneous brewing but they like the results they get better with a bit more control. If you find yourself in Denver stop on by and see Our Mutual Friend.  Tell 'em we sent ya.Thanks for listening to Beer Guys Radio! Good Measure Pub & Brewery Coffee. Beer. Food.Good Measure Pub & Brewery makes it easy to know what you're getting when you visit.  Coffee.  Beer. Food. emblazoned across the front of the building.  The Brewery recently added food to their offerings and they share ownership, and a building, with Carrier Roasting Company.  Sounds like my kind of place.Andrew Leichthammer is the owner and head brewer at Good Measure.  He digs a table beer and offers several at his pub and we talk about what exactly a table beer is.We also talk cask ales.  We're seeing more mentions of these lately so we discuss if this old style is the next big thing in American craft beer.  Andrew's on board with it and has a beer engine on the way.Pastry peanut butter, coffee beers, and vintage ales round things out.  It's a good one.  Enjoy! Thanks for listening to Beer Guys Radio! Episode 476 – Hazy Flagship IPA Blind Battle Royale: Round 1 In this first round of what will become an ongoing arbitrary competition, we conduct a blind tasting of five Chicagoland breweries’ go-to, year-round, flagship hazy IPAs to determine our favorites – and to move the top beer(s) onto the championship round. For this one, we start with two newer flagships, a top award winner, and two of the original local hazies – and the results catch us totally off guard. Also, Ryan’s got a new swear word to consider thanks to his six year-old, we’re expanding our merchandising brand, and Craig’s Mosaic blindness actually comes in handy for once. Stay tuned for Round 2 in a few weeks, as we scour the shelves for more flagship hazy IPAs to toss into the ring.  Beers Reviewed Blindly Old Irving Brewing – Beezer Hubbard’s Cave – Fresh IPA Solemn Oath Brewery – Small Wave City Club Half Acre Beer Co. – Waybird Maplewood Brewing Company – Son of Juice

295: Barn Town Enjoys Making Hazy IPA and Tart Fruit Beers That People Enjoy Barn Town popped up on our radar in 2022, with a number of beers across styles that scored well with our blind panel of judges, but the best of the bunch was Neon hazy IPA with an impressive score of 98. In our upcoming IPA issue, they did it again with another 98 for hazy double IPA Stink, Stank, Stunk, so naturally we felt the need to ask some questions and understand how they’re making consistently impressive beers.

In this episode, founder Pete Faber, head brewer Grant Brower, and brewer Cody Guyer cover a list of topics, including:

updating beer recipes over the past half decade to adapt to changing customer tastes
building stability in hazy IPA with malted oats, wheat, and Pilsner malt
why Citra is “the bacon”—good with everything
chilling the whirlpool and optimizing for survivable
dry hopping after crashing to minimize less desirable flavors
consistency and variability in hop varieties from lot to lot
brewing fruited sour beers without gluten-containing grains
the impacts of thickness and gravity on batch pasteurizing

And more.

296: Pilsner Urquell’s Václav Berka Tells the Story of Pilsner and Preaches Excellence in Lager Brewing The sandstone cellars of Plzeňský Prazdroj—better known to us as Pilsner Urquell—may be the ideal place to wallow in the history of the world’s most popular beer style with brewmaster emeritus Václav Berka. As the brewery’s 13th brewmaster in a line that stretches back to Josef Groll, there are few people better qualified to recount the story of pilsner, discuss the details of how it’s brewed at its birthplace in Plzeň, and offer suggestions on how to brew an excellent and addictive one in your own brewery.

Among other topics, Berka discusses:

Pilsner Urquell’s pivotal role in the history of modern beer
the elements of Pilsner Urquell, from malting their own barley and the city’s famously soft water to generous hopping with Saaz and the house lager yeast
how control over the malting is directly related to the brewery’s traditional triple-decoction mash
about the Pilsner Urquell that is still fermented and matured on oak, to compare to the large-scale commercial batches (and to share on the popular tours)
the overarching importance of drinkability to pilsner and to Czech beer, and thoughts on purusing excellence in lager brewing

Beer and Biscuits with Brahmari Brewing Beer and Biscuits with Brahmari BrewingBrahmari Brewing doesn't currently have any bees but their name is from the Sanskrit term for "like a bee."  Brahmari specifically refers to a black Indian bee and is the Hindu goddess of bees.  Neat.Despite their lack of an apiary, Beekeeper Arthur Jefferson shared the brewery does have a way of attracting bees.  I don't know if that's a good or bad thing.  Arthur and Head Brewer Brian Quade joined us on the show this week to talk about their awesome Asheville brewery.Brahmari brews batch of beer with a bunch of Bo Berry Biscuits, gets busted by BojanglesYep, you read that right.  Probably.  We get the full scoop on Brahmari's It's Biscuit Time blueberry sour.  If you've had it once you're lucky, this one won't be back, at least not under the same name.  As we sip some tasty Brahmari brews we chat about the great beer scene in Asheville, NC and get Arthur and Brian's picks on where to go after we visit Brahmari.  We talk beer fests and music and bringing the two together, a quick mention of Brahmari's new location in Charlotte, candles, and leichtbiers. The Beer ListThanks to Brahmari for the awesome sampling of their brews.Murder on the Mountain (Black Kolsch)Fast Cars, Danger, Fire and Knives (Kolsch)Cubism Dream (BBA German Pilsner)Special. It's pronounced Modist Modist Brewing has you covered for your THC and ABV fixDid you hear that Minnesota "accidentally" legalized weed?  The story circulated earlier this year and it's somewhat true.  They did unintentionally legalize hemp-derived THC edibles, like infused snacks, and drinks.  Way to go, Minnesota.Modist co-owner and head of marketing Daniel Paul Wellendorf chuckles when telling the story that opens our discussion on their Tint THC seltzers.  They keep the dosage pretty low at 3-5mg per can.  This is a chill kind of drink, not a baked out kind of drink.  They also have Pastry Lagers, (Thank you Lord for answering our prayers) along with "normal" beers like your NE IPA, West Coast IPA, some tasty fruited sours.  Wellendorf shares about their unique brewhouse that helps them brew with much less water than a normal brewhouse.  Being eco-friendly is a nice side effect but the main reason they have the brewhouse is to get as much out of their beers as they can.  We wander across other random topics this week as well.  Talk about our new Beer Caramelizer we can't wait to try, offer up beers for Spooky Season, and more talk of packaging sizes cause were kind of obsessed with that right now.Modist's beer is available in good chunk of Minnesota and select areas of Wisconsin, Ohio, Chicagoland, and… Arizona?  Yep.  Arizona. Thanks for listening to Beer Guys Radio! Episode 475 – English-Style Chicago Even without a proper cask engine, we sample five Chicagoland interpretations of centuries-old English styles to appreciate what is hopefully a still-growing trend. The beers sometimes overlap in style but none are done exactly the same way, which makes this a nice little learning experience. Also, Ryan lets the AI script a few scenes for the podcast, we’re trying hard to find a suitable replacement for “mouthfeel,” and Craig’s ready to go pro with his vape tricks for ESPN7. Plus, there’s a Jack Bauer mission, greasy digits, crewneck tattoos, hard corn, a crazy game of UNO, and a good morning at the White Castle. So basically, the least English episode ever. Homebrew clubs, competitions, and beer judging from Peach State Brew Off Homebrew competitions are a great place to get judgmentalThe Peach State Brew Off, organized by the Covert Hops Society, is Georgia's oldest and largest homebrew competition.  We've competed in the comp a few times but this is the first time we've taken the show on the road to the event.Georgia's got some weird homebrew laws and the event has struggled to find a home in recent years.  Legislation was passed that was supposed to legitimize running these events, but it added some rules and hoops to jump through that made it more difficult with required permits and forbidden locations.  No matter, the  event has persevered. As the sampling goes on we talk with Scott Lathrop about homebrewing, the event, and the club then we dive in a bit deeper with Covert Hops President Nate Watkins as we sample the Best of Show winners from the meads and ciders categories.Phil Farrell joins us for a bit of a deep dive into judging beers and why a beer may get the score it does, even if the brewer (it's me) thinks it deserves a higher score.  Farrell also shares some tips on what it takes to become a BJCP beer judge and what you can do to get there. If you're a newer brewer then entering a beer into competition can help you get some honest feedback on how to take a good beer to a great beer, even if you don't take home a medal.Note:  We intended to list the winners here, even promised it at the end of the show, but we don't have that info yet.  We apologize for being dirty liars. Thanks for listening to Beer Guys Radio!
