253: Matt Van Wyk and Brian Coombs of Alesong Stay Focused on the Barrel Science teacher turns brewer. On paper, it makes sense. But Alesong’s Matt Van Wyk made the career transition long before many in the current generation of brewery owners made similar leaps. With two decades of professional brewing under his belt, Van Wyk has observed, and brewed through, many trends, but the love of barrel-aged beer led him and his partners (including Alesong production director Brian Coombs) to create Alesong with a deep focus on three threads—Farmhouse-style beers fermented with Brettanomyces, mixed-culture sour beers, and spirits-barrel-aged “clean” fermentations.

The results have been impressive, with industry recognition through medals, and a club-based customer base that supports their boundary-pushing work. But this brewery that looks and feels like a winery (and is, in fact, located on a small parcel next to one of the area’s largest and most significant wineries) is less concerned with creating hype and more focused on the slow, iterative process of making compelling and flavorful beer.

252: 10 Barrel’s Tonya Cornett Takes a Layered Approach to Fruit Beer Tonya Cornett marks her brewing experience in decades, but the head of R&D for 10 Barrel in Bend, Oregon, isn't resting on any laurels. She’s earned every right to cruise, with many GABF and World Beer Cup medals under her belt—including three at the World Beer Cup earlier this year—but she continues to challenge herself and her team to find new and better ways to express flavor in beer.

One of her favorite styles, and one she’s earned wide acclaim for, is quick-soured fruit beer. Under their Crush brand, 10 Barrel now sells these beers across the country, and Cornett’s small brewery and R&D team are constantly working ahead, creating new iterations with different fruits and ingredients for 10 Barrel’s pubs in Bend. In this episode, she discusses how she’s made this “simple” style much more difficult to make, from varying grain bills based on the fruit, to using different yeasts, and including one fruit in multiple forms to capture all of its flavor.

brewing quick-soured beers in two stages as blender batches
using wheat, oats, and dextrin malt to build mouthfeel and keep the beers from drying out

E331: Fertile Ground Beer Co. introduces Brewery 2.0 Fertile Ground Beer Co. brings Brewery 2.0 to Jackson, MS
Mississippi moves at its own pace.  A bit slower, more relaxed.  Most folks don't get caught up in trends and hype.  Of course, this can be an issue for craft beer since it loves both of those things.
Despite the boom in most areas Jackson hasn't had a single production brewery open since 2019, when the lone brewery (Lucky Town) closed.  A few months ago Fertile Ground Beer Co. brought brewing back to The City with Soul.
Introducing Brewery 2.0
Connor Reeves and Matthew Mclaughlin know a thing or two about the legal side of craft beer.  Their law firm has helped many breweries navigate opening.  When their hometown was without a brewery they decided they'd be the ones to change that.
Putting their plans together they noticed the taproom trend was dark wood, brushed nickel, and iron.  They didn't want to follow that trend (told ya) so they opted for a light and bright taproom with a splash of color, Brewery 2.0, as they call it.
Mississippi Loves Saison
Jackson may not be ready yet for a bunch of American Wild Ales, but they do enjoy good beer.  Fertile Ground offers brews like Pilsner and other Lagers but their Small Batch Sundays bring in Hazy IPAs, Kettle Sours, and Saisons.  The locals have really taken to Saisons and I'm all about that.  Be our savior, Mississippi, help us make Saisons cool again.
Fertile Ground is a young brewery but things are going well.  In any good-sized city people love great beer.  Being the lone brewery in town, for now, they can do a lot of good to get their customers ready to chase them whales.

Pareidolia Brewing Co. is also a brewery in Sebastian, FL, on the Treasure Coast.  Owner Pete Anderson joined us and we yammer on about beer and cheese.  We love good cheese and just had a fancy new shop open in Atlanta.  Maybe we'll do another cheese show?  Pete likes cheese, and his wife is a proud cheesehead.
Pete also moved to the Eastern coast of Florida from Oregon and was saddened at the beer selection, so he started a brewery.  He also started the Treasure Coast Wine & Ale trail, and he's a member of the Florida Brewers Guild.

Maine Beer Company is a family affair, founded by brothers Daniel and David Kleban in 2009. The pair set out on a mission to “Do What’s Right,” a motto that continues to guide their business today, most notably as members of the 1% for the Planet initiative. Known primarily for IPAs and Pale Ales, Maine Beer Company might be best recognized in an exclusive category of New England powerhouses, alongside the likes of Trillium, Tree House and The Alchemist. Since our preview way back in 2016 DCBC has expanded to offer spirits and cider along with their brews and they're about to move to a fancy new location.  On the spirit side they've got frozen cocktails in the taproom and a line of RTDs (that's "ready to drink" canned cocktails) that are extremely popular.
Trey joined us and brought along Director of Hoperations Winn Chastain and Head Brewer Ryan Polk.  They shared some of their beers and cocktails as we bitched more about seasonal creep, pondered pairings for their Lechuza line of Mexican lagers, discussed the growing  trend back towards more West Coast(ish) IPAs and discussed the agave shortage.

251: Nick Panchamé of HOMES and Smooj Applies His Chef’s Training to Fruited Hard Seltzer and More Smooj, the heavily-fruited smoothie-like hard seltzer produced by the brewing team at HOMES brewery in Ann Arbor, Michigan, may draw the ire of certain brewing purists, but its approach is captivating consumers across its growing footprint. It flies in the face of conventional logic around hard seltzer, embracing more rather than less—more calories, more flavor, more body. And the novel approach has inspired a growing subcategory of the hard seltzer market as more craft brewers try their hand at similar beverages. But one thing sets Smooj apart—Panchamé and the brewing team are just as passionate about making fruited sour beer (from coolshipped spontaneous brews to pitched mixed culture beers and quick-sour iterations) and that broad-based love of fruit and flavor finds its way into many of their different product expressions.

249: Andy Hooper, Former Seismic Brewmaster, is Taking Light Lager Back for Craft Light lager may not be the style most brewers are passionate about, but it’s one that many people drink. Long dominated by macro brewers and beers lightened by corn and rice adjuncts, it’s a competition category that fewer craft brewers have found success in. But for Andy Hooper, former brewmaster of Seismic Brewing in Santa Rosa, California, the beer style was ripe for craft reinvention.

A very technically-minded brewer, Hooper had built out the brewhouse and cellar to allow for a fine degree of control, but the process of dialing in light lager using organic malt that was grown and malted in California by craft maltsters required quite a bit of fine tuning. In this episode, Hooper discusses:


designing a brewery with wastewater reclamation and sustainability at its core
connecting with craft maltsters and modifying stock malting processes for lightness and flavor
committing to minimalist brewing with a focus on ingredients
hot side process and constantly monitoring pH
specific lautering parameters geared toward clean light lager
gentle ingredient handling to minimize any distracting flavors

We all know cans are cool. Right?  All the hype beers come in cans.  Great Lakes Brewing Co. has been around since before cans were cool for craft.  Good, craft beer came in bottles, and the macro stuff was shoved into cans.  When you're 30+ years old in American craft beer you're going to have some fans that still think a craft beer needs to come in a bottle.  That's exactly why classic like Edmund Fitzgerald Porter (aka Eddie Fitz, aka Fitz) and Eliot Ness Amber Lager stay in bottles.  When they tried to make the switch to cans their OG fans weren't having it, so back to bottles they go.
But Great Lakes Brewing Co. isn't just about their classic beers.  They've got new hotness like their Crushworthy Lo-Cal Citrus Wheat and TropiCoastal Tropical IPA (fun fact for the Georgia folks, TropiCoastal was inspired by Creature Comforts Tropicalia) goes into cans.  A little something for everyone at GLBC.
Brand Coordinator and Beer Educator Michael Williams joined us this week to talk about the old and new, employee ownership, and hot dog pairings and toppings.   We also discuss moves and mergers and sellouts and acquisitions.  Great Lakes Brewing recently hired Steven Pauwels to join the team, the  legendary brewer previously at Boulevard.  You can check out our 2019 show with Pauwels on Ep. 180.

Episode 441 - Hair of the Dog For almost 30 years, Alan Sprints and his Portland, Oregon brewery Hair of the Dog pioneered American craft beer through some of the earliest barrel-aging experiments and developed potent beers built for aging, creating some of the original “whales” in the process. Once Alan decided to retire and close his legendary brewery in June of 2022, Craig booked a trip to experience Hair of the Dog for a final time and to get Mr. Sprints on the microphone to reflect on his career and look ahead to the joys of retirement. Round 120 - Brouwerij West The HOP heads to Stephen’s backyard this week, back in California for a stop at Brouwerij West! Industry veteran Brian Mercer decided to hang his own shingle in 2010, founding the brewery after a long career importing Belgian candi sugar for some of the top breweries in America. The company rose to popularity in 2016 when they opened their production brewery and taproom, taking over a former U.S. Navy warehouse in the LA port city of San Pedro. Stephen & Gabe sample several offerings, (including one beer style we’ve never had on the show,) to see what makes Brouwerij West so popular with craft beer heads “in the know.”
