On this Episode, number 73, of the “Just Bein’ Honest” Podcast, I was welcomed in to the lusciously gorgeous home of the “ingredient police” herself - Laurel Gallucci of Sweet Laurel Bakery.
Laurel Gallucci, one of seven children, has baked delicious treats since she could turn on the oven: chocolate chip cookies for her brothers, beautiful layer cakes for community events. Even at an early age, Laurel liked to keep things simple. She always had an experimental eye, removing elements that seemed unnecessary and only using the best and most wholesome ingredients. 
When she was struck with an aggressive auto-immune disorder, her doctor put her on a strict elimination diet, and told her "you'll never eat chocolate cake again." Because of her deeply emotional connection to food, Laurel struggled. After months of baking treats for her family and friends she couldn't touch, she finally said, "enough is enough" and started tinkering with the ingredients she could eat. When she shared her grain-free and refined sugar-free goods with friends, they were blown away. Laurel’s baked goods were tender and moist and full of flavor. They were the opposite of the pasty, brick-like gluten free and vegan goods that her friends had been used to eating. Excited by their reactions and encouragement, Laurel turned her test kitchen into Sweet Laurel Bakery so that everyone can enjoy healthful, simple treats.
Both Laurel and I agree that eating well is one of the most pivotal parts of Self-Respect, so why not indulge a little with some of the best alternative ingredients you can get your hands on?

Much like Laurel, I find myself sitting and twiddling my thumbs at times, not certain what exactly to experiment on next. I too have gone through bouts of what it seems to be “helpless” moments in this modern world of health speed bumps, but then instantly snap out of it when I realize that being ASSERTIVE is to only way out. Finding GRATITUDE in what we DO have is the most magical gift of life and what a gift it is, am I right?!
Some of my favorite takeaways from Laurel is that she continues to practice the art of being “assertive” in order to cultivate a thriving business. I especially love that when she decided to create Sweet Laurel Bakery, she tuned in to staying LASER FOCUSED. How did she do this? Her simple mantra was, “Do one thing and do it well” and to always maintain integrity.
