Food For Chakras - 2nd / Sacral chakra - Full Episode Vanita K. Gupta makes food for your Second chakra.
Special guest, Ariel joins her to co-create a Butternut squash, sunflower seed risotto with shiitake bacon!!

Recipe:
Sunflower seed risotto
1/2 butternut squash, roasted
2.5 cups sunflower seeds, soaked overnight with 2 Tbs salt and drained
6-10 shiitake caps, diced
2 medium onions, diced
5 garlic cloves, diced
Veggie stock
coconut oil
salt
sage
rosemary
thyme
green peas, thawed if frozen or blanched if fresh
asparagus, chopped and blanched
Carrots, halved and roasted whole for garnish
green sprouts for garnish
Blend 3/4 cup sunflower seeds with butternut squash, rosemary, sage, thyme, and 3/4 cup stock. Should blend into a smooth cream, not too liquidy. Adjust salt to taste. Set aside.
Sautee onions in coconut oil over medium heat until translucent. Add shiitake and saute for a few minutes until oils have been released. Add garlic, stir through. Add remaining sunflower seeds and 1-2 cups stock and cook stirring until liquid has evaporated. Seeds should be al dente. lower heat. Add in blended seeds and stir through. Fold in peas and asparagus. Add salt to taste.
Serve with roasted carrots, shiitake bacon and greens.
Shiitake Bacon
1.5 Tbs coconut oil melted
3/4 tsp liquid smoke
1.5 tsp seasame oil
1 tsp coconut aminos (or regular braggs)
1/4 tsp salt
5 large shiitake caps, sliced
Preheat oven 400 degrees F
Blend all the ingredients together and add in shiitake, thoroughly mixing. Let sit for at least 20 min.
Lay in a baking sheet as a single layer and bake for 20 min. G\Flip over and bake 10-20 min until desired crispiness.

Food For Chakras - 1st / Root Chakra - Full episode Vanita K Gupta makes food for the First/Root Chakra.
Joined by special guest Ariel.

Recipe for Vegan Nut Fudge:
1 cup macademia
1 cup pecans
1/2 cup walnuts
10-15 large dates soaked overnight or soaked in boiling water for 20 min
1/2 of a small/medium beet roasted
2 Tbs coconut oil
1 Tbs vanilla paste
1 tsp cinnamon powder
1/2 tsp salt
1/3 cup ground flax seed
1/2 100% cacao powder

~ Extra: cacao pwd, hemp seeds, cacao nibs, coconut shreds, hemp seeds, flax or whatever you want to roll the balls in

~ Optional: ginger essential oil, CBD extract, mushroom powder, etc
Play and make it your own or according to mood.

Place all the nuts into a food processor and grind until they are a sandy like texture. Place in a bowl and set aside.

Put dates, beet, coconut oil, vanilla paste, cinnamon, salt, flax and cacao into food processor and blend until a paste. Add in nuts and blend until mixed.

Roll into balls and roll balls in a topping.

Store in freezer for long term, fridge for use within a week or two.
